카베르네 소비뇽임을 완전히 숨긴 완숙도와 세월

블라인드로 와인을 받았을 때는 세월의 흔적이 보이는 중간 루비색의 와인으로, 블랙베리, 검은체리 등 검붉고 진득한 느낌의 과실향과, 달콤한 초콜릿, 감초의 풍미가 진하게 풍겼으며, 가죽, 건초등의 숙성향이 꽤나 났다. 입에서는 탄닌이 묵직하지만 엄청나게 부드럽고 산도는 중간에서 중간+정도로 약간 아쉬웠으며, 알콜감이 꽤 높았다. 완전히 숙성되고 세월의 흔적에 피라진이 지워지니 도저히 카베르네 소비뇽이라고 생각을 할 수 없었다. 앞으로는 구조감을 보고 품종을 유추하는 연습을 좀 해보는 것이 좋을 듯 하다 

Full ripeness and aging time hide the original character of Carbernet Sauvignon

When I get this wine with a blind, it was a medium ruby wine with traces of time, with a dark red and rich fruit scent such as blackberries and black cherries, sweet chocolate, and licorice, and leather and hay. The tannin was heavy in the mouth, but it was extremely soft, and the acidity was slightly disappointing, ranging from medium to medium+, and the alcohol was quite high. When pyrazine was completely aged and erased by the traces of time, I couldn't think of it as a Cabernet Sauvignon. From now on, it would be better to practice inferring varieties based on the structure
