양조 : Fermentation: Each vineyard is vinified separately. After destemming and light crushing, the must is covered with CO2 for a gentle warm maceration of approximately a day. Alcoholic fermentation begins about 24-36 hours later from native yeasts. A gentle maceration takes place in upright open-top steel tanks for the first 8-10 days of alcoholic fermentation. Immediately after alcoholic fermentation, which takes around 20 days, malolactic fermentation takes place in 500 liter French oak casks. Aging: French oak casks (25% new) for 12 months, followed by 9 months of bottle aging.

[Tasting note]

건자두에 후추를 후추후추

색은 시음적기가 다소 지난만큼 전체적으로 짙은 가넷색으로 익어있었다. 향은 부엽토와 숲바닥의 느낌이 지배적이면서 말린 검은 자두와 블루베리 그리고 약간의 후추향이 은은하게 다가온다. 오크향은 다크 초콜릿 느낌으로 검푸른 느낌의 과일향과 잘 어울어진다. 입에서는 산도와 탄닌이 중간정도로 마시기 편한수준에서 밸런스가 잘 맞아있고 질감도 부드럽다. Syrah가 연상되는 노즈로 매력은 있으며 가성비 와인으로 마실만 하다. 사실은 시음적기가 지난 와인이지만 여전히 매력이 있다. 

Pepper on dried prune

The color was ripe as a dark garnet color as it was somewhat past the drinking window. At the nose, tertiary note of forest floor and wet leaves, and the dried black plums, blueberries, and a little pepper comes out subtly. The dark chocolate of oak goes well with the dark blue fruit. At the mouth, medium acidity and medium tannin are well balanced and texture is soft making wine easy to drink. Aroma wise, it is Syrah like wine, which is attractive and worth drinking as a value wine. In fact, wine is past its drinking window, but it is still attractive.
