양조 : We hand-picked each block and delivered firm, cool clusters to the winery before sunrise. After gentle pressing, the wine settled for 24 hours, followed by a carefully monitored racking to French oak barrels, 63% new. Native yeasts slowly guided alcoholic fermentation, with careful batonnage until malolactic fermentation was complete. The wine aged in barrel for 15 months, and was bottled unfined and unfiltered.

엄청나게 큰 덩치에 비해 산도가 약해서 밸런스가 무너졌다...

아카시아향과, 잘 익은 파인애플, 황도, 멜론의 열대과일과 달큰한 핵과류 풍미가 주를 이루며, 꿀, 헤이즐넛, 바닐라의 오크향이 엄청나게 진하게 다가온다. 입에서는 산도가 낮고 무거운 바디를 보여줘 자꾸 마시기가 힘든 와인이다. 피니쉬는 오크향으로 길게 이어지며 나무에서 온듯한 피니쉬 끝의 쌉쌀한 아몬드 풍미도 느껴진다. 향만 보고 판단하면 96-97점을 줄 만 하지만 캘리포니아 샤르도네는 'ABC : Anything But Chardonnay'의 근원이라는 사실을 다시한번 팔렛에서 깨닫게 해준다
